A very incredible meal at Zinc in Charlottesville. Chef Justin is a bit of a genius. Magazines will write about him more soon. There’s nothing vegan on the menu, so he invented this for me. Splendid. Delicious. I paired the wine wrong, but I should have waited to taste the meal before I ordered it. Next time I get something invented, I’ll ask the chef for a flavor description or a wine suggestion depending on how well I know him/her.
